  • Make brown butter: melt it gently in a saucepan, and let it cook until a layer of foam forms on the surface and brown spots appear. Turn off the heat and strain it through a sieve lined with a cloth. The butter has taken on a beautiful golden color and will release aromas reminiscent of crème brûlée…
  • Combine the powdered sugar and brown sugar, almonds, flour, green tea, and a pinch of salt.
  • Gradually fold in the egg whites until the mixture is smooth. Then pour in the clarified butter and stir until the batter is smooth.
  • Let it cool for 15 minutes in the freezer or one hour in the refrigerator.
  • Preheat the oven to 180°C.
  • Fill the financier molds with batter. Place them on the middle rack of the oven. Bake for 20 minutes at 180°C.
  • Remove from the pan as soon as they come out of the oven and enjoy them warm with a scoop of ice cream!
