Make brown butter: melt it gently in a saucepan, and let it cook until a layer of foam forms on the surface and brown spots appear. Turn off the heat and strain it through a sieve lined with a cloth. The butter has taken on a beautiful golden color and will release aromas reminiscent of crème brûlée…
Combine the powdered sugar and brown sugar, almonds, flour, green tea, and a pinch of salt.
Gradually fold in the egg whites until the mixture is smooth. Then pour in the clarified butter and stir until the batter is smooth.
Let it cool for 15 minutes in the freezer or one hour in the refrigerator.
Preheat the oven to 180°C.
Fill the financier molds with batter. Place them on the middle rack of the oven. Bake for 20 minutes at 180°C.
Remove from the pan as soon as they come out of the oven and enjoy them warm with a scoop of ice cream!
