Here is my recipe for herb and cheese scones—they’re easy to make.

Scones are small British pastries traditionally served at tea time. What makes this recipe unique is that it offers a savory version of scones. To achieve this, we add cheese (Comté, Gruyère, or Cheddar) and fresh herbs (parsley, chives, dill…).

These savory scones are perfect as petits fours or appetizers for cocktail hour. Soft on the inside and slightly crispy on the outside, they’ll delight both kids and adults!

In terms of preparation, this recipe for savory cheese and herb scones is very simple and quick to make. All you need to do is make a classic dough, shape it into small rounds, and bake them in the oven.

You can serve these scones warm, accompanied by butter mixed with curry powder and peeled shrimp. You can also serve them with lightly salted butter and thin slices of cured ham.

Ingredients for Scones aux herbes et au Comté

  • Image de flour
    280 g of flour including 10 g for the work surface
  • Image de baking powder
    1/2 bag of baking powder
  • Image de County
    100 g of County or Gruyère or Cheddar
  • Image de liquid crème fraîche
    8 cl of liquid crème fraîche
  • Image de egg
    3 eggs including one yellow one for the "gilding"
  • Image de butter
    70 g of butter including 10 g for the plate
  • Image de fresh herbs
    2 tbsp of fresh herbs parsley, chives, dill; chopped
  • Image de salt
    1/2 tsp of salt
  • Image de pepper
    1/2 tsp of pepper

Scones aux herbes et au Comté : instructions

  • 1
    Preheat the oven to 200°C (350°F).
  • 2
    In a mixing bowl, sift together the flour, baking powder, fine salt, and pepper.
  • 3
    Next, work in the softened butter with your fingertips until the mixture has a crumbly texture.
  • 4
    Add the eggs (reserving one for glazing) and the whipped cream, then the grated cheese, and finally the chopped herbs.
  • 5
    Shape the dough into a ball, then roll it out into a layer half a centimeter thick.
    Using a glass, cut out circles from the dough and place them on a buttered and floured baking sheet.

    Brush the dough rounds with egg yolk and bake them 10 to 12 minutes.

    Serve these scones while they're still warm.

Notes

1) Cumin and sesame scones: Add a teaspoon of cumin seeds to the dough, then sprinkle the work surface with white sesame seeds instead of flour when rolling it out.

2) Sweet scones: Replace the Comté cheese and herbs with raisins and walnut pieces. Serve with butter, jam, and honey.
