When you cook lentils, their cooking water absorbs some of their flavor, nutrients, and minerals. This lentil water soup is a delicious way to make the most of it.
The lentil cooking water gives this soup a velvety texture and depth of flavor.
The aromatic bouquet and vegetables perfectly complement this base. In fact, you don’t even need a bouquet garni if you’ve already cooked your lentils with herbs.
In short, ever since I discovered this lentil water soup, I never throw away my cooking water!

It's a great recipe—I make it often because I love lentils with béchamel sauce.
Hello;
It turned out great!;
I need to remember to save the water the lentils were cooked in. ;

I tried it. Perfect.
We eat a lot of pasta and rice.
Can we use the cooking water?
Thank you
Hi Nancy, I'm glad you liked my recipe! Rice cooking water is known to be good for digestion and overall health, so feel free to use it in soups as well, or as a herbal tea flavored with spices and/or ginger.
This is the perfect soup—I make it every time I cook lentils—but I just saw some zucchini (and leeks) that are out of season. Thanks
It's not zucchini season—what can we use instead?
Hello Huguette, thank you for your message!
It’s true that zucchini season has been over for a while now, and I completely agree that we should cook with seasonal ingredients…
So, for example, you could replace the zucchini with leeks, which work very well in this soup.
Another option is to switch from zucchini to squash! A butternut squash, for example, peeled, seeded, and cut into pieces.
I’ll actually add these tips to the recipe so it’s truly suitable for any season.
Enjoy your meal, and feel free to let us know which vegetable you chose and if you liked it!
Sylvain.
Good evening. I’ve bookmarked this recipe—it looks delicious—since I saved the water I cooked the lentils in.
I’ll make it when zucchini is in season. Thank you
Hello. This time I didn't throw away the water I cooked the lentils in. I'm going to give it a try because the recommendations seem good to me.
I use the water from the lentils to cook the rice
Awesome
Great idea. I'm making a vegetarian pâté with lentils, walnuts, and nutritional yeast. I'm going to use the water from the lentils to make the soup. I wasn't sure about it, but I'm going to do it your way. Thanks
Hi Martine, I hope you enjoy the recipe! And your pâté looks unique and delicious—please feel free to share the recipe on the site if you're happy with it! I'd love to try it…
This is the second time I've made it;
And once again, we really enjoyed it! This time I added some grated Gruyère—yum yum;
It's easy to make—I highly recommend it
