Poulet “Basquaise” minute

Ingredients

7 ¾ oz of chicken breasts or fillet

3 tomatoes

1 red bell pepper

1 onion

10 black olives

2 garlic

bouquet garni thyme, bay leaf

olive oil not extra virgin (does not withstand high temperatures)

salt, pepper
Instructions
Preheat the oven to 220°C.
Rinse the tomatoes and slice them; rinse the bell pepper, remove the seeds, and cut it into half-centimeter-wide strips, then cut those strips in half. Peel the onion, remove the core, and finely chop it; do the same with the garlic. Cut the chicken breasts into pieces.
Put everything in a mixing bowl, add the olives and the bouquet garni, season with salt and pepper, drizzle with a little oil, and mix well so that the oil coats all the ingredients.
Pour the contents of the mixing bowl into a baking dish and bake for 25 minutes.
