Here is my recipe for vegetable patties with carrots and cumin. These patties look very appetizing with their beautiful golden color. As for the flavor, the combination of carrots and cumin works wonderfully!

What ingredients do you need for these vegetable patties?

As you’ll see, the ingredients are all fairly easy to find, whether at an organic grocery store or a supermarket. 

These patties are reminiscent of rösti, those famous Austrian potato patties. In rösti, eggs act as the binding agent, preventing the patties from falling apart during cooking.

But you won’t find any eggs in these carrot patties. The secret? It’s the chia seeds, which, when mixed with plant-based milk, help these vegan patties maintain their texture during cooking.

When should you serve these vegan croquettes? 

You can prepare these patties as an appetizer or even as a main course. As part of a vegan or vegetarian meal, you can serve them with a salad featuring pumpkin and sunflower seeds. You could also pair them with a creamy cheese sauce (as a source of protein).

But these delicious carrot-cumin patties aren’t just for vegan or vegetarian meals. They also make an original and delicious side dish for grilled meat or steamed fish fillets.

    In a bowl, mix the chia seeds with the oat milk.
    Let it sit 10 minutes at room temperature.

    Meanwhile, scrub and rinse the carrots (no need to peel them—their skin is full of vitamins).

    Peel and remove the roots from the onion and garlic, then chop them finely.

    Add the carrots, onion, and garlic to the bowl with the chia seeds.
    Add the cumin, cilantro, and flour, and mix until you have a smooth batter.

    Using a cookie cutter (or your palms), shape the dough into rounds about 5–7 cm in diameter and less than 1 cm thick.

    Heat a drizzle of oil in a skillet.
    Cook the patties over medium-high heat for 5 minutes on each side.
