Not a fan of endives because you find them too bitter? I recommend trying this recipe for braised endives with onions!

The slow braising process makes them both golden and tender. Plus, the onions, butter, and lemon balance out the bitterness of the endives and give them a delicious touch.

In short, it’s a real treat that’s easy to prepare for a meal that’s both balanced and delicious!

Ingredients for Endives braisées aux oignons

    1 kg of endives
  • Image de onion
    3 onions
  • Image de garlic
    1 pod of garlic
  • Image de lemon
    1/2 lemon Optional
  • Image de butter
    20 g of butter
  • Image de oil
    2 tbsp of oil
  • Image de salt and pepper

Endives braisées aux oignons : instructions

  • 1
    Remove the wilted leaves from the endives. Using a sharp knife, scoop out the inside of the stalk, which is often bitter.
  • 2
    Quickly rinse the endives under running water, gently peeling back the outer leaves. Drain them and immediately squeeze them in a kitchen towel to remove the water, as it makes them bitter when cooked.
  • 3
    Place the endives in a casserole dish or a deep skillet with the oil and butter. Brown them on all sides over medium heat.
  • 4
    Peel and slice the onions, crush the garlic cloves, remove the skin and germ, and chop them into small pieces.
  • 5
    Add the onions and garlic to the endives, along with the lemon juice. Season with salt and pepper.
  • 6
    Cover the pot and simmer over very low heat for 40 minutes , turning the endives and onion regularly to prevent them from sticking.

Notes

These braised endives with onions make a delicious side dish for fish.

    Très bonnes et simples à préparer… j’aime en particulier qu’il n’y ait pas de sucre ajouté comme on peut le voir dans certaines recettes. Et les endives ne sont pas pour autant amères, grâce à l’oignon et aux précautions qu’a donné Ratatouille… Merci !
