Here is the authentic recipe for Merveilles from my grandmother Marie-Louise. These delicious, large, thin, light, and crispy fritters, dusted with powdered sugar, have left me with unforgettable memories.

These Merveilles are very easy to make, and kids can even help out with the batter.

However, you’ll need to make sure to keep them away while they’re frying!

Ingredients for Les Merveilles de ma grand-mère

  • For the dough
  • Image de egg
    2 eggs
  • Image de crème fraîche
    8 tbsp of crème fraîche
  • Image de butter
    20 g of butter softened
  • Image de salt
    1 pinch of salt
  • Image de sugar
    20 g of sugar
  • Image de flour
    400 g of flour
  • Image de lemon zest
    1 lemon zest
  • Image de orange zest
    1 orange zest
  • Image de orange blossom water
    1 tsp of orange blossom water
  • Image de sunflower oil
    1 liter of sunflower oil for the water bath
  • Sprinkle on after baking
  • Image de powdered sugar
    50 g of powdered sugar
  • Kitchen utensils

  • Image de deep fryer
    deep fryer optional, or a cast-iron casserole, or a deep skillet (saute pan)

  • 1
    Let the butter soften at room temperature, or microwave it for a few seconds if you're in a hurry.
    Mix the whole eggs, cream, softened butter, sugar, and a pinch of salt, beating until the mixture is fluffy.

    Gradually sift in the specified amount of flour using a flour sifter, or a colander if you don’t have one. This will prevent lumps from forming in the dough.

    If the dough is still too sticky, add more flour as needed until you can knead it.

    Next, knead the dough and let it rest in the refrigerator for about an hour.

    Roll the dough into a thick sausage shape and cut it into 18 to 20 rounds.

    On a floured surface, roll out each round as thinly as possible. Gently stretch it out a little more with your fingers.

    Heat your cooking oil in a cast-iron pot or a deep fryer.
    Test the temperature with a small ball of dough or a kitchen thermometer (170°C).

    Take a piece of dough and drop it into the hot oil, frying for about one minute on each side, until it is lightly browned.

    Once the fritter is cooked, remove it from the oil, let the oil drain off, and place it in a bowl lined with paper towels.

    Using a sugar sifter or a colander, dust the fritter with powdered sugar, and repeat the process with each piece of dough.

    Il manque juste un peu de fleur d’oranger et de zeste de citron pour retrouver leur saveur complète 😉

    Délicieux, toute la famille s’est régalée… C’est très facile à cuire quand on a une friteuse, sinon il faut réserver une marmite exprès avec de l’huile qu’on garde dedans, et faire attention à la température à laquelle on chauffe l’huile.
