Beignets de haricots plats

  • Rinse and trim the ends off the green beans, then blanch them in lightly salted boiling water for 3 minutes.
  • Drain thoroughly and let cool.
  • Make the batter: Add the flour, beer, olive oil, salt, and pepper to a mixing bowl and mix well.
  • Add the eggs one at a time, and beat the mixture until the batter is smooth and lump-free.
  • Heat the cooking oil in a pot or your deep fryer.
    Personally, I use a to check that the oil is at the right temperature (170°C).
    Dip the beans one by one into the batter, and fry them on both sides until the fritters are golden brown.
  • Remove the fritters from the pan and place them on paper towels. Serve immediately and enjoy while they're still hot!
