Ingredients for Pâtes à la Sicilienne

  • Image de egg
    2 eggs
  • Image de eggplant
    2 eggplants
  • Image de onion
    1 onion
  • Image de tomato pulp
    400 ml of tomato pulp
  • Image de basil
    basil
  • Image de Penne-Rigate
    300 g of Penne-Rigate

Pâtes à la Sicilienne : instructions

  • 1
    Let the eggplants sit for 30 minutes to draw out the moisture: slice them and sprinkle them with salt.
  • 2
    Pat them dry, then sauté them in olive oil.
  • 3
    Sauté the onion over low heat. Simmer the pulp, then add the onion; at the end of cooking, add the basil.
  • 4
    Meanwhile, hard-boil the eggs for 10 minutes, then cut them into small pieces.
  • 5
    Mix the eggs, tomato sauce, and eggplant.
  • 6
    Cook the pasta and serve it with the sauce.
