Endives braisées aux oignons

Ingredients

2.2 lb of endives

3 onions

1 pod of garlic

Instructions
Remove the wilted leaves from the endives. Using a sharp knife, scoop out the inside of the stalk, which is often bitter.
Quickly rinse the endives under running water, gently peeling back the outer leaves. Drain them and immediately squeeze them in a kitchen towel to remove the water, as it makes them bitter when cooked.
Place the endives in a casserole dish or a deep skillet with the oil and butter. Brown them on all sides over medium heat.
Peel and slice the onions, crush the garlic cloves, remove the skin and germ, and chop them into small pieces.
Add the onions and garlic to the endives, along with the lemon juice. Season with salt and pepper.
Cover the pot and simmer over very low heat for 40 minutes , turning the endives and onion regularly to prevent them from sticking.
Notes
These braised endives with onions make a delicious side dish for fish.
