Gruyère holds an indispensable place in our kitchens: grated over a gratin, melted into a sauce, or incorporated into a quiche, it adds flavor, texture, and that comforting touch that makes so many dishes a success.

Originally from Switzerland but widely adopted in France, it is distinguished by its hard, cooked, pressed texture and its flavor, which is both mild and slightly fruity, intensifying as it ages.

It is often confused with Emmental, another very popular Swiss cheese. The key difference lies in the taste and appearance: Gruyère is generally more aromatic, with a slightly firmer texture, while Emmental is milder and softer. It is also Emmental that features the characteristic large holes, formed naturally during aging by gas bubbles released by bacteria. Gruyère, on the other hand, has only small openings, sometimes barely visible, or none at all depending on the wheel.

So, while the two are sometimes used interchangeably in cooking, it’s worth understanding their specific characteristics. Gruyère adds a more pronounced flavor that enriches a stew or gratin, while Emmental, which is milder and stringier, pairs perfectly with dishes where a melt-in-your-mouth texture is the main goal.
