The Four Pillars of Pastry

The world of pastry is built on four fundamental technical pillars that form the structure of every recipe.

First, we work with structural doughs like puff pastry or choux pastry, which we combine with creamy fillings such as ganache or pastry cream.

Added to this is the creation of light, airy cookies like sponge cake or dacquoise, as well as the meticulous work with sugar and chocolate for icings and decorations.

Are all desserts considered pastries?

It is important to note, however, that not all desserts belong to the pastry family.

Simple milk-based desserts, fresh fruit, ice cream, or confections like nougat fall under distinct categories. Indeed, they do not require this specific work with dough or complex assembly.




Pastry Traditions Around the World

Around the world, pastries are divided into major cultural families with unique signatures.

  • France, the temple of elegance, shines with its classic techniques such as the Mille-feuille, the Éclair, or the Macaron.
  • In the Middle Eastern and North African tradition, pastries emphasize the crispness of phyllo dough and the sweetness of honey, as seen in Baklava or Gazelle Horns.
  • The Anglo-Saxon tradition focuses more on comfort and generosity with cheesecake or carrot cake.
  • Latin American pastries celebrate the richness of eggs and cream with Pastéis de nata or Cannoli.
  • Central Europe, meanwhile, stands out for the sophistication of its layer cakes, such as Black Forest cake or Apfelstrudel.
