An iconic tool of Asian cuisine

The wok is an iconic tool of Asian cuisine, recognizable by its flared shape and rounded bottom, designed to provide excellent heat transfer and quick cooking.

Used for centuries in China and later adopted throughout Asia, it has now won over kitchens around the world with its versatility.

Stir-frying over high heat, steaming, deep-frying, simmering, smoking...—a single pan can do it all.

Among the most famous dishes prepared in a wok are chow mein and ginger beef. But you can just as easily prepare crisp vegetables with sesame, udon noodles, and stir-fried rice.

Finally, the wok allows for a multitude of combinations blending sauces, spices, vegetables, meats, or tofu.

What material for a wok




Today, there are various wok models suited to all cooking styles and all types of stoves.

Traditional carbon steel woks are prized for their rapid heating and their ability to develop a patina over time, which naturally creates a non-stick surface.

Heavier cast-iron models provide excellent heat retention, ideal for keeping food at the right temperature or searing thicker cuts.

There are also stainless steel woks, which are easier to maintain, as well as modern non-stick versions, which are practical for beginners or for reducing the use of fats.

Different Models and Accessories

The shape and handles also influence ergonomics: the traditional wok often has a long side handle. This allows it to be handled with a single motion, while wider versions are equipped with two handles for a better grip during cooking.

Some woks come with useful accessories such as a lid for simmering or braising, a cooling rack to drain fried foods, or a bamboo spatula for handling noodles and vegetables without damaging the surface.
