Pie pan : Introduction

Choosing the right pie pan is essential for successful baking. Each material has its own advantages… but also some limitations to consider.

Metal pans

Metal pans, often made of steel or aluminum, offer excellent heat conductivity. The crust turns out crispy and the baking is even. However, the pastry can stick if you forget to butter the pan well or line it with parchment paper. Often coated with a non-stick material, they are more prone to scratches.

The glass pan

Glass pans are appealing for their transparency, which allows you to monitor baking effortlessly, and for their ability to retain heat longer once removed from the oven. However, they take a little longer to heat up and are fragile when exposed to thermal shocks.




The ceramic pan

Ceramic pans, on the other hand, distribute heat gently and evenly. They also add an elegant touch to the table since you can serve directly from them. Another advantage: the thermal inertia of ceramic allows the pan to keep the dish warm for about half an hour. However, its heavier weight and relative fragility can make it less practical for everyday use.

The silicone baking dish

Finally, silicone pans are valued for their flexibility and flawless release, without the need for greasing. They are also lightweight and easy to clean. However, they conduct heat less effectively than other materials. This can result in a slightly less golden crust. Additionally, they must be placed on a sturdy surface to prevent warping. Finally, it is not recommended to use low-quality silicone, as the chemicals used in the mold’s manufacturing process could leach into your food during baking.

So, choosing the right tart pan depends as much on the desired result as on your cooking habits: a perfect crisp crust, neat presentation, or ease of use.
