It’s used, of course, to make bread dough, pastries, pancakes, and fresh pasta. But it also serves as a thickening agent in sauces or stews.

Flour can be derived from various grains and legumes, such as wheat, buckwheat, corn, rice, chestnuts, or chickpeas...

The letter "T," followed by a number, refers to the ash content (mineral residue) measured after incinerating 100 g of flour. The higher this number, the more whole-grain the flour is and the richer it is in bran (the outer layer of the grain). For example:




  • T45: very white, used for fine pastries,
  • T55: standard white flour for everyday use,
  • T65: slightly whole-wheat, more nutritious,
  • T80 to T150: semi-whole-grain to whole-grain flours.
