Introduction

In traditional French cuisine, crêpes and galettes hold a special place. These delicious dishes made with flour, eggs, and milk are loved by everyone, young and old alike. Whether it’s a sweet crêpe for a snack or a savory galette for a meal, these treats will delight your taste buds and take you on a journey through the regions of France.

The History of Crêpes and Galettes

Crêpes and galettes trace their origins to the grain-based flatbreads consumed by Celtic peoples. Over the centuries, these flatbreads evolved into the sweet crêpes we know today. As for savory galettes, they are often associated with the region of Brittany, where they are prepared with buckwheat flour, also known as black wheat.

Traditions surrounding crêpes and galettes

In France, making crêpes and galettes is often linked to traditions and festivities. The most famous of these is undoubtedly Candlemas, celebrated on February 2, when it is customary to flip crêpes while holding a coin in your hand to ensure prosperity throughout the year. This tradition dates back to a pagan practice of offering galettes to the gods to welcome the reborn light of the sun and drive away the evil spirits of winter.

Typical dishes made with pancakes and galettes

The culinary possibilities offered by crêpes and galettes are endless. On the sweet side, crêpes can be topped with jam, maple syrup, chocolate, fresh fruit, or even sugar and lemon juice. Savory galettes, on the other hand, are often enjoyed with fillings such as the "complète" (ham, cheese, egg), the "forestière" (mushrooms, crème fraîche, cheese), or the "Bretonne" (andouille sausage, onions, crème fraîche). They can also be enjoyed in a sweet version, for example with salted butter caramel.

In conclusion, crêpes and galettes are traditional French dishes that span regions and eras. Whether sweet or savory, these delicious creations will always be a hit at your meals with family or friends. So, give in to temptation and discover the delights of French crêpe and galette cuisine!
