What is brown sugar in cooking?

Brown sugar encompasses several types of non-white sugars ranging in color from beige to very dark brown. This hue comes either from the natural presence of molasses or from its addition after refining. Muscovado sugar

Muscovado is an unrefined cane sugar rich in molasses. It has a sticky texture and an intense, almost licorice-like flavor. It adds character to chocolate desserts, sauces, and rustic dishes.

Rapadura (or panela)

Rapadura is a whole-cane sugar obtained by evaporating cane juice without refining. It comes in loaves or blocks, and sometimes as a powder. Its flavor is very aromatic, with notes of honey, caramel, and dried fruit. It remains common in Latin America and in natural cooking.

Coconut sugar
