Less well-known than black pepper but just as valuable, white pepper is a spice that adds warmth, elegance, and subtlety to dishes without altering their color. Derived from the same fruit as black pepper, it differs in its preparation method: the ripe peppercorns are stripped of their black husk before being dried, which gives them their light color and milder, slightly musky flavor, with a hint of warmth that isn’t overpowering.
In cooking, white pepper is prized for seasoning white sauces (Béchamel, veloutés), cream-based sauces, delicate fish, poultry, purées, or soups, when one wishes to maintain a light color while adding character. It also pairs very well with mushrooms, eggs, and seafood.
