Characterized by its wide base, low sides, and two side handles, it allows for even cooking of the rice across a large surface area. Traditionally made of polished steel, it is also available in enameled steel, stainless steel, or enameled cast iron, each material offering its own advantages: polished steel heats up quickly and provides excellent searing, while enameled versions are easier to maintain.
Diameters vary depending on the number of guests: a 30–34 cm pan is suitable for 2 to 4 people, while a 60–65 cm model can cook for 8 people. If you’re hosting a large-scale festive paella dinner for 16 people, you’ll need a pan with a 90 cm diameter.
