Ghee is a cooking ingredient widely used in India and other South Asian countries. It is clarified butter—that is, butter from which the water and milk protein content has been significantly reduced.
Ghee has a rich, nutty flavor, making it an excellent alternative to traditional butter for cooking or frying foods. In fact, the maximum cooking temperature for butter should not exceed 120°C. Ghee, on the other hand, can be heated up to 200°C. It is therefore a fat that is perfectly suited for frying.
It also has a longer shelf life than butter and can even be stored at room temperature.
