As the iconic cheese of Auvergne, Cantal holds a special place in the kitchen, appearing in both traditional recipes and more contemporary dishes. Made from cow’s milk, it is distinguished by its evolving flavor profile, which varies depending on the length of aging. It can be used melted, grated, shaved, or cubed, adding character and depth to dishes.
Young Cantal, aged between 1 and 2 months, has a soft texture and a mild, milky flavor. It melts easily and is often used in gratins, sauces, croque-monsieurs, or quiches.
Next comes “entredeux” Cantal, aged 3 to 6 months, which is firmer and more aromatic, prized for its balance between meltiness and character.
Finally, aged Cantal, matured for at least 6 months, develops powerful and complex flavors, slightly tangy, with a more crumbly texture.
A little-known fact is that the rind of the “cantal vieux” is edible. Well-brushed and naturally aged, it concentrates intense aromas and can be used in shavings, finely grated, or added to broths, soups, or stews to enhance the flavor.
