Tarte à la tomate

Instructions
Roll out the dough in a 28-cm pan.
Spread a thin layer of mustard on the bottom of the pastry.
Grate the cheese and spread it over the dough.
Slice the tomatoes and arrange them on top of the cheese in a rosette pattern.
Sprinkle the surface of the tart with herbs, salt, and pepper, and drizzle with a little olive oil.
Bake in a preheated oven at 200°C for 25 to 30 minutes.
