Tarte à la tomate

  • Grease a large pie pan.
    Roll out the puff pastry and prick it with a fork.
  • Slice the cheese into slices a few millimeters thick.
    The Chef’s Tip
    You can use a mandoline or a vegetable peeler for this.

  • Slice the tomatoes.
  • Spread a thin layer of mustard, then top with sliced cheese and sliced tomatoes.
    Season with salt.
  • Sprinkle with herbes de Provence and drizzle a little olive oil over the entire tart.
  • Bake in a hot oven (210°C) for about 30 minutes.
  • Enjoy this tomato and mustard tart warm or cold—it’s delicious either way!
