Swiss chard fondue with bacon bits
Serves : 4 people
Preparation : 10 minutes
Cooking : 25 minutes
Instructions
Rinse the Swiss chard leaves one by one, then cut the stalks into rounds and the leaves into strips.
Place the Swiss chard in a pot of boiling water, adding a splash of lemon juice if desired to prevent it from browning as it oxidizes. Let it cook for 10 minutes.
Meanwhile, peel and finely chop the onion and garlic. Set them aside separately.
In a skillet or Dutch oven, sauté the bacon bits, and once they start to brown, add the sliced onion. For a less greasy dish, you can drain the fat from the bacon through a strainer before adding the onions.
Cook over medium heat for a few minutes, then add the garlic and Swiss chard. Season with pepper to taste.
If you don't have homemade chicken broth, make some by dissolving a bouillon cube in boiling water.
Pour the chicken broth over the mixture and simmer uncovered for 10 minutes so that the liquid reduces and absorbs all the flavors.
Notes
This sautéed Swiss chard with bacon bits will go great with spaghetti or gnocchi.
