Loup au fenouil

Ingredients

4 nets of Sea Wolf or otherwise known as Bar

2 lemons

4 onions means

white wine
-
fennel fresh greens, if you have them, or the bulbs with their greens if not

thyme

olive oil

salt and pepper
Instructions
Preheat the oven to 240°C. Pour a little olive oil into a terracotta baking dish.
Peel and slice the onion, then toss it in the oil.
Wash and slice the fennel bulbs into strips. If you have fennel fronds, you can leave them as is, simply cut lengthwise.
Place the fillets in the dish and turn them so they are coated with oil.
Add thyme and fennel, then season with salt and pepper.
Slice the lemons and place the slices on top of the fillets.
Drizzle the fillets with white wine, and cover the dish with aluminum foil.
Bake for 35 minutes.
