Saumon en Brick

  • Preheat the oven to 200°C. Grease the bottom of a baking dish.
  • Place a sheet of brick pastry in a shallow bowl, spread two or three tbsp of crème fraîche in the center, and sprinkle with dill and pink peppercorns.
  • Place the salmon in the pan, season with salt and pepper, and sprinkle with dill and pink peppercorns again,
  • Spread a little crème fraîche over the salmon, then fold the edges of the brick pastry over to seal it, securing them with a toothpick. Using a pastry brush, brush the brick pastry with a little oil, then place it in the baking dish,
  • Place the dish in the oven for 20 minutes, not too close to the broiler (Brick tends to brown quickly, so keep a close eye on it!).
