  • In a bowl, mix together the mustard, wine, and crème fraîche. Coat the steaks with this sauce.
  • Prepare the foil packets: Cut a sheet of parchment paper and place it in a shallow bowl or ramekin.
  • Place the steak in the foil packet, pour a few tbsp of sauce over it, and seal the packet by folding the foil over itself several times to ensure it is completely sealed.
  • Bake the parcels in the oven, checking on them every now and then to make sure they don't burn!
  • Serve with rice and sorrel or spinach.
