Roast Chicken with Garlic, Herbs, and Lemon

  • Preparing the chicken
    • Using a paring knife, make slits under the chicken skin and insert sprigs of rosemary into them.
    • Peel the garlic cloves. Rinse the herbs. Place the garlic cloves, half of the herbs, and the bay leaf inside the chicken.
  • Preparing the roasting pan
    • Preheat the oven to 200°C.
    • Rinse the lemon and squeeze it. Set the rest of the lemon aside. Mix together a marinade using the lemon juice, oil, salt, and pepper.
    • Place the squeezed lemon (cut into wedges), the unpeeled garlic cloves, the thinly sliced onion, and the remaining herbs in a ceramic baking dish.
    • Place the chicken in the dish and baste it with the marinade on all sides, along with the garnish. Add the water to the dish.
  • Cooking
    • Place the dish in the oven and bake for about 1 hour and 40 minutes, adjusting the cooking time based on the weight of the chicken.
    • Turn the chicken every 20 minutes so that it browns evenly on all sides and absorbs the cooking juices.
    • Once the chicken is done cooking, leave it in the oven for 10 minutes. This will make the meat even more tender and less dry.
