Potage aux fanes de radis

  • Separate the radish greens from the bunch.
    Rinse and drain them.
    Add them to a pressure cooker.
  • Peel and chop the vegetables. Place them in a pressure cooker with the oil.
  • Sauté the vegetables over low heat until the greens have wilted.
    Season with salt and pepper to taste.
  • Cover with water, cover the pot, and cook for 20 minutes.
  • Once the vegetables are cooked, open the pot and blend them in a food processor until they have a smooth, velvety consistency.

    For an extra touch of indulgence, try serving this radish green soup with grated Parmesan or a dollop of crème fraîche!
