Potage aux fanes de radis

Instructions
Separate the radish greens from the bunch.
Rinse and drain them.
Add them to a pressure cooker.
Peel and chop the vegetables. Place them in a pressure cooker with the oil.
Sauté the vegetables over low heat until the greens have wilted.
Season with salt and pepper to taste.
Cover with water, cover the pot, and cook for 20 minutes.
Once the vegetables are cooked, open the pot and blend them in a food processor until they have a smooth, velvety consistency.

For an extra touch of indulgence, try serving this radish green soup with grated Parmesan or a dollop of crème fraîche!
