  • Cut the rabbit into pieces.
  • Peel the onion and chop it.
  • Pour a little oil into a skillet. Brown
    the rabbit pieces.

    Season with salt and pepper, then add the chopped onion.

  • Cook for 15 minutes, stirring constantly.
  • Squeeze the lemon; pour the juice over the rabbit.
  • Arrange the rabbit pieces in a deep serving dish.
  • Deglaze the pan by adding 1 to 2 tbsp of boiling water.
    Stir well over high heat.
  • Drizzle the sauce over the rabbit pieces.
    Serve immediately with green peas.
