Merveille aux Pruneaux

  • Place the pitted prunes in a saucepan with the sugar, water, zest, and cinnamon, and simmer for 15 minutes over low heat.
  • Let the cooking syrup reduce slightly until the liquid level is just covering the prunes.
  • Set aside 4 prunes for garnish. Blend the prunes and refrigerate the jam.
  • To assemble, take a stemmed glass and start by adding a layer of heavy cream, followed by the prune jam, and finally the cottage cheese.
  • Place the decorative prune on top and serve.
