Pineapple-Coconut Energy Smoothie

  • Cut the pineapple into pieces, removing the skin, and do the same with the banana. Place them in the blender jar.
  • Peel and dice the ginger, then add it to the blender.
  • Add the mint leaves and agave syrup, then blend on medium speed for a few seconds until all the ingredients are pureed.
  • Then add the coconut milk and blend on high speed until the mixture is both creamy and frothy. Chill for at least 30 minutes before serving.
