  • Cut the bell peppers into large cubes, finely chop the onion, and sauté them gently in a little olive oil.
  • When the vegetables are tender, season with salt and pepper, then add the crushed coriander seeds, cumin, and oregano, along with the crushed garlic.
  • Roll out the dough in a buttered baking dish, prick it with a fork, and blind-bake it for 10 minutes.
  • Meanwhile, lightly beat the eggs, stir in the crème fraîche, and add the vegetables.
  • Spread this mixture over the dough, and bake at medium heat (210°C) for 35 minutes.
