Tarte aux poivrons

Cut the bell peppers into large cubes, finely chop the onion, and sauté them gently in a little olive oil.
When the vegetables are tender, season with salt and pepper, then add the crushed coriander seeds, cumin, and oregano, along with the crushed garlic.
Roll out the dough in a buttered baking dish, prick it with a fork, and blind-bake it for 10 minutes.
Meanwhile, lightly beat the eggs, stir in the crème fraîche, and add the vegetables.
Spread this mixture over the dough, and bake at medium heat (210°C) for 35 minutes.
