  • Peel the apples, cut them into small pieces, and place them in a saucepan.
  • Cut the vanilla bean in half and scrape out the seeds.
    Add the water, vanilla seeds, muscovado sugar, and cinnamon, and stir everything together.
  • Cook the apples over very low heat—so they retain their vitamins—for about 30 minutes.
    Stir occasionally to prevent them from sticking.
  • Once the apples are soft, turn off the heat and mash them with a fork. Enjoy warm or cold.
