Instructions
Peel the apples, cut them into small pieces, and place them in a saucepan.
Cut the vanilla bean in half and scrape out the seeds. Add the water, vanilla seeds, muscovado sugar, and cinnamon, and stir everything together.
Cook the apples over very low heat—so they retain their vitamins—for about 30 minutes. Stir occasionally to prevent them from sticking.
Once the apples are soft, turn off the heat and mash them with a fork. Enjoy warm or cold.
