Lamb Chops with Garlic Cream Sauce

  • Peel the garlic cloves. Rub the lamb chops with a clove cut in half, along with salt and pepper.
    Set aside at room temperature.
  • Place the remaining garlic cloves in a saucepan with the milk and a cup of water.
    Cook them over medium heat for 20 minutes.
  • Place the tender pods in the blender jar with the crème fraîche and blend thoroughly until smooth.
    Season with salt and pepper.
  • Place the lamb chops in an ovenproof dish with the olive oil and 2 tbsp of water.
  • Bake the squares for 16 to 20 minutes, depending on how well done you want them, in an oven preheated to 220°C (338°F).
  • Remove them from the oven, cover the dish tightly with a sheet of parchment paper, and let them rest for 5 to 10 minutes.
  • Gently heat the garlic cream in a saucepan.
  • Serve the cutlets with garlic cream and small steamed potatoes.
