Grilled zucchini with olive oil

  • In a bowl, mix the olive oil with the herbs. Season with salt and pepper.
  • Rinse the zucchini and slice them into pieces a few millimeters thick. You can use a mandoline for this.
  • Preheat the oven to 190°C. Remove the rack and place the zucchini slices on it.
    Brush both sides with the flavored oil.
  • Place in the oven and bake for 15 to 20 minutes depending on the thickness of your slices.
    Keep an eye on them while they bake, or they’ll burn!

  • Notes

    These oven-roasted zucchini can be enjoyed right away, but they also keep very well in the fridge and are delicious served cold with an omelet, for example.
