Instructions
In a bowl, mix the olive oil with the herbs. Season with salt and pepper.
Rinse the zucchini and slice them into pieces a few millimeters thick. You can use a mandoline for this.
Preheat the oven to 190°C. Remove the rack and place the zucchini slices on it. Brush both sides with the flavored oil.
Place in the oven and bake for 15 to 20 minutes depending on the thickness of your slices.
Keep an eye on them while they bake, or they’ll burn!
Notes
These oven-roasted zucchini can be enjoyed right away, but they also keep very well in the fridge and are delicious served cold with an omelet, for example.
