  • Cut all the vegetables into pieces, toss them in a bowl with the oil and herbs, and season with salt and pepper.
  • Preheat the oven to 240°C.
    Lay out a large sheet of parchment paper. Place a layer of vegetables on it, then add the fish—seasoned with salt on both sides—and cover with another layer of vegetables.
    Seal the parcel by folding the edges lengthwise, then roll the edges several times to secure them.
  • Bake for 40 minutes.
    Serve with rice.
