  • Combine all the ingredients in the bowl of a mixer. Mix on low speed until all the ingredients are well combined, without overmixing.
  • Roll out the dough to a thickness of 3 cm, then cut out shapes using a pastry wheel.
  • Place the cakes on a greased baking sheet. Bake at 180°C (350°F) for 40 to 45 minutes. They should be lightly browned.
  • Let cool on a wire rack. Store in an airtight container.
  • Notes

    Variations: Stir 180 g of raw almonds into the batter. Finish as described above. Add the zest of two lemons to the base mixture.
