Gratin de courgettes

  • Wash the zucchini without peeling them, pat them dry, and cut them into 1-cm-thick rounds.
  • Add them to 3 liters of boiling salted water and cook for 15 to 18 minutes.
  • Pour them into a colander to drain. Using a slotted spoon, press them to remove any excess water.
  • Place the zucchini in a buttered baking dish. Mash them coarsely with a fork.
  • In a mixing bowl, beat the eggs as if making an omelet, then add the cream and grated Gruyère cheese. Season with salt and pepper, and sprinkle with grated nutmeg.
  • Pour this mixture over the zucchini, stir, and bake in a hot oven (220°C) for 15 minutes.
