Velouté de pommes de terre au saumon

  • Peel and chop the onion, peel and wash the potatoes, and cut the salmon into strips.
  • Cut the potatoes into large cubes.
  • Heat the oil in a soup pot and sauté the chopped onion.
  • Add the diced potatoes and pour in the white wine.
  • Add the vegetable broth. Bring to a boil, then cover and simmer for 20 minutes.
  • Using a blender, puree the potatoes until very smooth.
  • Pour in the crème fraîche. Stir. Add the lemon juice. Season with salt and pepper.
  • Blend the soup again before serving.
  • Arrange the marinated salmon on the plates. Pour the cream soup over it. Add a little freshly ground pepper and serve immediately.
