Céleri-Rave à l’orange

Instructions
Peel the celeriac, cut it into large pieces, and brown it (without burning it) in a Dutch oven with the oil. Cook for 10 minutes.
Rinse the celery stalk and cut it into small pieces; peel and finely chop the onion; rinse and scrub the carrot, then cut it into small cubes. Add these vegetables to the pot, cover, and cook for 10 minutes.
Meanwhile, zest the oranges.
Add the brown sugar, orange zest, orange juice, cloves, star anise, and bay leaf. Season with salt and pepper, cover, and simmer gently for about one hour.
Once the dish is done cooking, remove the zest and bay leaf, and serve the celery and vegetables.
Notes
For a complete vegetarian meal, serve this orange-glazed celeriac with rice. This dish can also be served as a side dish with fish; in that case, cut the celeriac into smaller pieces.
