Carottes glacées à la crème

  • Wash and scrub your carrots. No need to peel them—you’ll lose flavor and vitamins!
  • Cut the carrots into pieces of uniform size and thickness; this will make them look more presentable and appetizing.
  • Place the carrots in a large pot or wok, add just enough water to cover them, and add the butter, salt, and pepper.
  • Cook them uncovered over fairly high heat for about 20 minutes. Finish cooking covered over low heat for another 10 minutes.
  • Once removed from the heat, stir in the crème fraîche, give it a quick stir, and serve garnished with a few sprigs of chopped parsley.
