Carottes glacées à la crème

Instructions
Wash and scrub your carrots. No need to peel them—you’ll lose flavor and vitamins!
Cut the carrots into pieces of uniform size and thickness; this will make them look more presentable and appetizing.
Place the carrots in a large pot or wok, add just enough water to cover them, and add the butter, salt, and pepper.
Cook them uncovered over fairly high heat for about 20 minutes. Finish cooking covered over low heat for another 10 minutes.
Once removed from the heat, stir in the crème fraîche, give it a quick stir, and serve garnished with a few sprigs of chopped parsley.
