Dice the tomato into small cubes, finely chop the onion, and mash the hard-boiled egg with a fork. Season with salt and pepper and drizzle with oil. Mix well.
Thinly slice the lettuce.
Arrange them on a serving platter.
How to Make an Omelet
Beat the eggs with the milk. Season with salt and pepper. Add 4 finely chopped mint leaves. Mix well and set aside.
Season the brocciu with salt and pepper, then stir in 8 finely chopped mint leaves. Mix well and roll it into a thick log.
Cook the omelet over low heat in a skillet with a little oil. While it’s still runny, place the strip of brocciu on top.
Fold the omelet like a turnover and place it on the serving platter next to the salad. Drizzle the dressing over the salad and serve the omelet piping hot!

WHAT SHOULD YOU DRINK WITH THIS BROCCIU OMELETTE? I recommend a Porto-Vecchio rosé.
