Beet Hummus

  • Cut the beets into pieces and place them in the bowl of your blender. Add the lemon juice, tahini, olive oil, cumin, and a pinch of salt.
  • Blend all the ingredients until you have a smooth purée. Taste and add salt if needed.
  • Peel and de-germ the garlic, then press it into the beetroot purée using a garlic press. Mix well and serve this beetroot hummus in a pretty bowl.
  • Notes

    You can serve this beet hummus with raw vegetables cut into sticks (carrots, fennel, cauliflower, celery), or with vegetable chips.
